So… I want to keep this short and sweet as I only just wrote about Byron. Today, Byron launched their brand new premium 8oz patty developed in conjunction with O Sheas in Knightsbridge, and I had reserved two at the Byron Soho branch earlier in the day. What is my perfect burger?

We can break this burger down to its constituent parts, the bun, the condiments, the garnish, the cheese and the most important part, the patty. The heart and soul of every burger is the patty and this is where we will start. Lean cuts of beef tend to make very dry burgers and it is the fat in the burger that gives it the best flavour. There is also the question of getting the right texture to aid both during cooking and final product. A course grind is preferred. Even compressing the beef into patties too tightly can cause it to lose any lightness in texture completely. The patty should be in proportion to the size of the tomato, the bread and whatever else you have. Finally we get to cooking the patty, resulting in a charred seared exterior and rosy pink interior, medium rare from edge to edge, soft and oozing with juices . Continue Reading…

I can probably count the number of times I’ve really felt an urge like eating a burger twelve months leading up to the Shack Shake burger on one hand. Do I eat McDonalds Big Macs. Yes. I like them although they make me feel physically sick after. Convenience food. That’s all. Awesome fries too when they’re steaming hot and fresh. In London, there’s always Hache or Byron Burger, the latter being my preference. Meat Beast Whopper, Burger King

The food is technically hygienically prepared. Potatoes are potatoes, and meat is meat from whatever part of the animal is has come from…

But does this look appetising to you?

This is a Double Meat Beast Whopper with cheese… Three Meats in one, Salami, Applewood smoked bacon and 100% Prime Beef Patty in sesame seed bun… gut busting OVERKILL!

And then there is this…The Burger King £95 Whopper. Wagyu Beef… From the Telegraph. If I was supremely wealthy, the kind to never wear the same shoes twice… ever, I might try a slice of one.


A Guy In New York: Good Eats

I’ve only eaten at one place they recommend and that is Chatham Restaurant. I went there in 2007 by myself to kill time (and have lunch). I got seriously lost getting there on foot without knowing the actual address and I thought the food was pretty average, perhaps let down more because I had such a mission getting there.
